Stout BBQ cheddar bacon burgers (Print Version)

# Ingredients:

→ Irish Cheddar and Bacon Pub Burgers

01 - 1 lb chuck roast or coarsely ground beef
02 - 8-10 pieces of bacon
03 - 2-4 slices of Irish Cheddar Cheese
04 - Granulated roasted garlic, to taste
05 - Granulated onion, to taste
06 - Salt and pepper, to taste
07 - Lettuce
08 - Potato buns

→ Irish Stout BBQ Sauce

09 - 2 cups of ketchup
10 - 1/4 cup apple cider vinegar
11 - 1/4 cup packed brown sugar
12 - 3/4 cup Irish Stout (not entire can)
13 - 1 Tablespoon BBQ seasoning

→ Irish Salted Potatoes

14 - 2 pounds petite gold potatoes
15 - 8 cups water
16 - 1 1/3 cup kosher salt
17 - 1/2 cup butter, melted

# Instructions:

01 - Preheat oven to 375°F. Prepare bacon by lining a sheet pan with foil then placing bacon on a cooling rack on top of foil lined baking sheet. Cook for 20-25 minutes or until desired crispiness.
02 - If preparing burger meat at home, using a meat cleaver, coarsely chop the chuck roast. Form beef into 3-4 patties and season with salt, pepper, granulated garlic and onion.
03 - Cook patties in a cast iron skillet for 3 minutes on each side, until internal temperature is at least 145°F (for medium-rare). Top with slices of Irish Cheddar and let it melt in the pan.
04 - Add all BBQ sauce ingredients to a pot on the stove. Bring to a boil then let simmer, stirring every few minutes, for at least 30 minutes. Continue to cook for a thicker sauce.
05 - Bring water to a boil and add in salt. Stir until salt is completely dissolved. Slowly add potatoes and then cover. Boil for at least 20 minutes but up to 30, depending on size of potatoes.
06 - Place each burger on a potato bun, top with crispy bacon, lettuce and Irish Stout BBQ sauce. Serve alongside the Irish salted potatoes drizzled with melted butter.

# Notes:

01 - For the best flavor, use authentic Irish Cheddar and Irish Stout beer.
02 - The BBQ sauce can be made ahead of time and stored in the refrigerator for up to a week.
03 - These burgers pair perfectly with the salted potatoes but would also be great with fries or a side salad.
