Italian Pastina Soup (Print Version)

# Ingredients:

01 - 1 yellow or white onion, roughly chopped.
02 - 2 carrots, roughly chopped.
03 - 2 celery sticks, roughly chopped.
04 - 6 cups chicken or vegetable broth.
05 - 1 Parmesan rind.
06 - 1 cup pastina pasta.
07 - ½ cup grated Parmesan cheese.
08 - Salt and pepper to taste.
09 - 2 tablespoons fresh parsley, chopped.

# Instructions:

01 - Roughly chop onion, carrots, and celery.
02 - Add vegetables to pot with broth and Parmesan rind. Bring to boil, then simmer covered 20-30 minutes until tender.
03 - Remove vegetables and blend with some broth until smooth. Return to pot.
04 - Add pastina to pot and simmer 7-9 minutes until tender.
05 - Turn off heat. Add Parmesan, salt, and pepper. Top with parsley.

# Notes:

01 - For best results, cook pasta separately and add to individual bowls.
02 - Can add protein like chicken or sausage for a heartier meal.
03 - Keep pastina separate from broth for storage.
