01 - 
                Peel the bananas and break them into a bowl. Mash them thoroughly with a fork or potato masher until smooth.

                Add the flour, sugar, vanilla extract, nutmeg, cinnamon, and salt to the mashed bananas. Stir everything together until you get a soft paste that's similar to pancake batter but a bit thicker.

                Pour enough cooking oil into a frying pan to shallow fry the fritters (the oil shouldn't completely cover them). Heat the oil over medium heat until hot.

                Using a tablespoon, scoop portions of the batter and carefully drop them into the hot oil. You might need to lower the heat a bit to prevent burning. Fry until golden brown on one side, then flip and cook until the other side is also golden and the inside is cooked through.

                Remove the fritters from the oil and place on paper towels to absorb excess oil. Serve warm as is or with a dusting of powdered sugar if desired.
