Quick Caribbean breakfast treat (Print Version)

# Ingredients:

01 - 4 very ripe bananas
02 - 60 g plain flour
03 - 3 tbsp sugar
04 - ½ tsp vanilla extract
05 - ¼ tsp nutmeg
06 - ¼ tsp ground cinnamon
07 - Pinch of salt
08 - Cooking oil for frying

# Instructions:

01 - Peel the bananas and break them into a bowl. Mash them thoroughly with a fork or potato masher until smooth.
02 - Add the flour, sugar, vanilla extract, nutmeg, cinnamon, and salt to the mashed bananas. Stir everything together until you get a soft paste that's similar to pancake batter but a bit thicker.
03 - Pour enough cooking oil into a frying pan to shallow fry the fritters (the oil shouldn't completely cover them). Heat the oil over medium heat until hot.
04 - Using a tablespoon, scoop portions of the batter and carefully drop them into the hot oil. You might need to lower the heat a bit to prevent burning. Fry until golden brown on one side, then flip and cook until the other side is also golden and the inside is cooked through.
05 - Remove the fritters from the oil and place on paper towels to absorb excess oil. Serve warm as is or with a dusting of powdered sugar if desired.

# Notes:

01 - These fritters are best enjoyed fresh and warm, straight after cooking.
02 - The batter consistency should be thick enough to hold its shape when dropped into the oil.
