Lemon Bar Cookie Cups (Print Version)

# Ingredients:

01 - 2¾ cups flour.
02 - 1 teaspoon baking soda.
03 - ½ teaspoon baking powder.
04 - 1 cup butter, softened.
05 - 1¼ cups sugar.
06 - 1 egg.
07 - 1 teaspoon vanilla extract.
08 - 6 tablespoons butter, softened.
09 - 1 cup sugar, for filling.
10 - 2 eggs plus 2 egg yolks.
11 - ⅔ cup lemon juice.
12 - 1 lemon, zested.
13 - 2 tablespoons powdered sugar.

# Instructions:

01 - Combine flour, baking soda, and baking powder. In separate bowl, cream butter and sugar until fluffy. Add egg and vanilla. Mix in dry ingredients.
02 - Roll dough into balls. Place in mini muffin tin. Bake until golden. Press centers while warm to create cups.
03 - Cream butter and sugar together. Whisk in eggs and lemon juice. Cook, stirring constantly until thickened.
04 - Fill cooled cups with lemon curd. Chill. Top with lemon zest and dust with powdered sugar.

01 - Chill dough before baking to prevent spreading.
02 - Use citrus juicer for maximum juice.
