Healthy Turkey Vegetable Meatballs (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 pound ground turkey (thigh meat preferred)
02 - ½ cup lightly steamed broccoli florets, finely chopped
03 - ½ cup kale, finely chopped
04 - ½ cup carrots, finely chopped
05 - 2 tablespoons fresh cilantro, finely chopped

→ Binding and Seasoning

06 - 1 egg, beaten
07 - 2 tablespoons butter or ghee, melted
08 - 1 tablespoon coconut flour
09 - 1 teaspoon salt
10 - ½ teaspoon garlic powder
11 - Black pepper to taste

# Instructions:

01 - Preheat oven to 400°F. Line baking sheet with parchment or place cooling rack on top.
02 - Combine all ingredients in large bowl until well incorporated.
03 - Roll into 28-30 small uniform meatballs using cookie scoop if available.
04 - Bake 15-18 minutes until cooked through and slightly golden.
