Hawaiian Loco Moco with Pineapple Rice (Print Version)

# Ingredients:

→ Burgers

01 - 1 lb ground beef (85% lean)
02 - 1/4 c diced sweet onion
03 - 1/2 t salt and pepper

→ Shiitake Gravy

04 - 1 T coconut oil
05 - 4 oz shiitake mushrooms, sliced, tough stems removed
06 - 1/4 c sweet onion, diced
07 - 2 c beef bone broth or stock
08 - 2 T tamari soy sauce
09 - 1/2 T Worcestershire sauce
10 - 1 1/2 T cornstarch, mixed with equal amount of cold water
11 - salt and pepper to taste

→ Pineapple Fried Rice

12 - 2 T coconut oil
13 - 1/2 sweet onion, diced
14 - 1 c pineapple chunks
15 - 4 strips soft-cooked bacon, chopped
16 - 2 c cooked jasmine or white rice, warm
17 - salt and pepper to taste

→ Additional

18 - 1/2 sweet onion, cut into rings
19 - 2 T coconut oil, divided
20 - 4 eggs, fried
21 - 2 green onions, chopped
22 - Sriracha or other hot sauce, as desired

# Instructions:

01 - Mix the ground beef with diced sweet onion, salt, and pepper. Form into 4 patties and cook to desired doneness.
02 - Heat coconut oil in a saucepan. Add sliced shiitake mushrooms and diced onion, sauté until tender. Add beef broth, tamari, and Worcestershire sauce. Bring to a simmer, then add cornstarch slurry to thicken. Season with salt and pepper.
03 - Heat coconut oil in a large skillet. Add diced onion and cook until translucent. Add pineapple chunks and chopped bacon. Stir in cooked rice and mix well. Season with salt and pepper.
04 - In a separate pan, sauté onion rings in 1 T coconut oil until softened. Remove and set aside. Use remaining coconut oil to fry the eggs to your preference.
05 - Place a portion of pineapple fried rice on each plate. Top with a burger patty, pour gravy over, and add a fried egg on top. Garnish with sautéed onion rings, chopped green onions, and a drizzle of Sriracha.
