01 - 1.1 pounds (500 grams) frozen or fresh-cut thick-cut or crinkle-cut fries
02 - 2 tablespoons olive oil (for baking fresh fries)
03 - 1 tablespoon Cajun seasoning
04 - 1/2 teaspoon garlic powder
05 - 1/2 teaspoon smoked paprika
06 - 1/4 teaspoon ground black pepper
07 - Pinch of salt (if Cajun seasoning is low-sodium)

→ Cheese Sauce

08 - 1 tablespoon butter or plant-based butter
09 - 1 tablespoon all-purpose flour
10 - 3/4 cup (200 milliliters) milk (dairy or plant-based)
11 - 3.5 ounces (100 grams) shredded cheddar cheese
12 - 1/4 teaspoon Cajun seasoning
13 - Pinch of salt
14 - Pinch of ground black pepper

→ Voodoo Sauce

15 - 4 tablespoons mayonnaise
16 - 2 tablespoons ketchup
17 - 1 tablespoon Dijon mustard
18 - 1 teaspoon hot sauce
19 - 1 teaspoon garlic powder
20 - 1/2 teaspoon smoked paprika
21 - 1 teaspoon vinegar or lemon juice
22 - 1 teaspoon sugar or honey

23 - Sliced jalapenos (fresh or pickled)

# Instructions:

01 - If using fresh potatoes, cut into thick fries and soak in cold water for 30 minutes. Drain, pat dry, and toss with olive oil, Cajun seasoning, garlic powder, smoked paprika, black pepper, and salt. Bake at 425°F (220°C) for 25–30 minutes or air fry until golden and crisp. For frozen fries, bake according to package instructions and toss with extra Cajun seasoning after cooking.
02 - In a saucepan, melt the butter over medium heat. Whisk in the flour to form a roux and cook for 1–2 minutes. Gradually whisk in the milk, stirring until smooth and thickened. Add shredded cheddar cheese, Cajun seasoning, salt, and black pepper. Stir until the cheese is fully melted and the sauce is creamy. Keep warm.
03 - In a mixing bowl, whisk together mayonnaise, ketchup, Dijon mustard, hot sauce, garlic powder, smoked paprika, vinegar or lemon juice, and sugar or honey until smooth and creamy. Taste and adjust heat or tanginess as desired.
04 - Arrange hot fries on a serving plate. Drizzle generously with cheese sauce. Add toppings such as jalapenos, red onions, scallions, and herbs. Finish with a generous drizzle of voodoo sauce. Serve immediately for optimal texture.
