Copycat Fast Food Breakfast (Print Version)

# Ingredients:

01 - 2 cups pancake mix (the kind that only needs water)
02 - 1 1/2 cups water
03 - 1 cup shredded cheddar cheese
04 - 1/4 cup maple syrup
05 - 1 lb breakfast sausage

# Instructions:

01 - Brown the sausage in a skillet over medium heat, crumbling as it cooks, until cooked through. Strain to remove excess grease and set aside.
02 - Add the pancake mix, water, cheese, and syrup to a large mixing bowl. Stir together until evenly combined. Fold in the sausage.
03 - Spoon the batter evenly out into nonstick mini muffin tin wells.
04 - Bake at 400° for 12-15 minutes, until cooked through and golden brown.
05 - Serve warm with syrup for dipping, if desired.

# Notes:

01 - If you're worried about the muffins sticking, spray the wells of the mini muffin tin pan with nonstick spray before adding the pancake batter
02 - You can use different cheese or spicy sausage for variations
03 - Real maple syrup tastes best but the fake stuff will work for this too
