Greek Style Salmon Bowl (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil for marinade.
02 - 1 teaspoon kosher salt.
03 - 1/2 teaspoon black pepper.
04 - 1 medium lemon, juiced.
05 - 4 cloves garlic, minced.
06 - 1 tablespoon dried oregano.
07 - 1 pound fresh salmon, diced.
08 - 2 tablespoons olive oil for cooking.
09 - 6 ounces couscous.
10 - Tzatziki sauce.
11 - Sliced cucumber.
12 - Cherry tomatoes.
13 - Feta cheese.
14 - Fresh dill.

# Instructions:

01 - Combine olive oil, salt, pepper, lemon juice, garlic, and oregano. Coat diced salmon and refrigerate 1 hour.
02 - Prepare toppings and cook couscous according to package directions.
03 - Heat oil in skillet. Cook salmon 2.5 minutes per side until flaky. Work in batches if needed.
04 - Layer couscous, salmon, vegetables, feta, tzatziki, and dill in bowls.
