Mexican Street Corn Fritters (Print Version)

# Ingredients:

→ For the Fritters

01 - 1 1/4 cups corn (about 2-3 ears)
02 - 1 jalapeno, seeded and finely diced
03 - 2 green onions, finely sliced
04 - 2 tablespoons cilantro, chopped
05 - 1/2 teaspoon lime zest
06 - 1 tablespoon lime juice
07 - 1/3 cup milk
08 - 1/4 cup mayonnaise (or sour cream)
09 - 3/4 cup flour (gluten-free for gluten-free)
10 - 1/2 teaspoon baking powder
11 - 1/2 teaspoon chili powder
12 - 1/2 teaspoon smoked paprika
13 - 1/4 teaspoon salt
14 - 1/4 teaspoon pepper
15 - 4 ounces cotija cheese (or feta), crumbled
16 - canola oil for frying

→ For the Sauce

17 - 2 tablespoons mayonnaise
18 - 2 tablespoons sour cream
19 - 1 tablespoon lime juice
20 - salt and pepper to taste
21 - chili powder to taste

# Instructions:

01 - Mix corn, jalapeno, green onions, cilantro, lime zest, lime juice, milk and mayonnaise in a bowl.
02 - In separate bowl, mix flour, baking powder, chili powder, paprika, salt and pepper.
03 - Mix wet ingredients into dry ingredients, then gently fold in cheese.
04 - Heat oil over medium heat. Drop 1-2 tbsp batter per fritter, frying until golden brown (1-2 minutes per side). Drain on paper towels.
05 - Mix all sauce ingredients together in small bowl.

# Notes:

01 - Can be shallow fried as small discs or deep fried by dropping spoonfuls of batter
02 - Makes 32-64 fritters depending on size
