Zucchini Bread (Print Version)

# Ingredients:

01 - 1 3/4 cups all-purpose flour.
02 - 1 teaspoon baking powder.
03 - 1/2 teaspoon baking soda.
04 - 1/2 teaspoon salt.
05 - 1 1/2 teaspoons ground cinnamon.
06 - 1/4 teaspoon ground nutmeg.
07 - 1/2 cup vegetable oil.
08 - 1/2 cup packed brown sugar.
09 - 1/2 cup granulated sugar.
10 - 2 large eggs, room temperature.
11 - 1/4 cup unsweetened applesauce.
12 - 2 teaspoons vanilla extract.
13 - 1 1/2 cups shredded zucchini.
14 - 1 cup chocolate chips or nuts (optional).

# Instructions:

01 - Heat oven to 350°F and grease a 9x5 inch loaf pan.
02 - Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
03 - Combine oil, sugars, eggs, applesauce, and vanilla, then stir in zucchini.
04 - Pour wet into dry ingredients and stir just until mixed.
05 - Fold in optional chocolate chips or nuts.
06 - Pour into pan and bake 55-70 minutes, covering with foil halfway through.
07 - Let cool in pan for 1 hour, then remove and cool completely.

# Notes:

01 - No need to squeeze zucchini dry.
02 - Can use coconut oil instead of vegetable oil.
03 - Keeps at room temp for 3-4 days.
04 - Can substitute sour cream for applesauce.
