Creamy earthy pasta side dish (Print Version)

# Ingredients:

01 - 2 tbsp. butter or olive oil
02 - 1 small onion, finely diced
03 - 2 large garlic cloves, minced
04 - 8 oz. baby Bella or crimini mushrooms, sliced
05 - ½ cup white wine (such as Sauvignon Blanc, Pinot Grigio, or Chardonnay)
06 - 1 cup orzo, uncooked
07 - 1 cup veggie broth
08 - 1 cup whole milk or Half & Half
09 - ½ tsp. sea salt or to taste
10 - ¼ tsp. black pepper or to taste

# Instructions:

01 - Sauté the chopped onion in a medium pot with butter for 4-5 minutes, or until it starts to brown.
02 - Add the garlic and mushrooms and cook for 7-10 more minutes, until the mushrooms begin to brown.
03 - Now, add the wine and cook until it almost completely evaporates.
04 - At this point, add the orzo, broth, milk, salt, and pepper and simmer everything together. Stir occasionally and let it cook for about 10 minutes, until almost all of the liquid is gone. Taste, add more seasonings if needed, and serve.

# Notes:

01 - Cut the mushrooms to a uniform size so they cook evenly and none are burnt.
02 - Start with the onions to allow them time to soften and brown, releasing their sweet flavor.
03 - Let the wine cook out to retain the tangy flavor without any alcohol.
04 - Let the dish simmer for the full time so the orzo can absorb the liquids and soften properly.
