Refreshing Summer Drink (Print Version)

# Ingredients:

→ For the Peach Strawberry Puree

01 - 4 ripe peaches, chopped into large chunks
02 - 2 cups fresh strawberries, stems removed and halved
03 - 1 cup water

→ For the Simple Syrup

04 - ½ cup water
05 - ¼ cup granulated sugar

→ For the Lemonade

06 - 1 ½ cups fresh lemon juice
07 - 6-8 cups cold water
08 - Ice

→ For Garnish

09 - Fresh chopped strawberries
10 - Fresh sliced peaches
11 - Lemon wedges
12 - Fresh mint leaves

# Instructions:

01 - Add the peaches, strawberries, and water to the bowl of a large blender or food processor and process until pureed.
02 - Pour the pureed peach and strawberries through a fine mesh strainer and into a large bowl. Use a spoon to help push the puree around and through the strainer. Discard any bits remaining in the strainer and set bowl aside.
03 - Add the granulated sugar and water to a small saucepan over medium heat. Bring mixture to a low boil, stirring occasionally. Allow mixture to boil for 3 minutes or so, or until mixture becomes syrupy. Set aside to cool.
04 - Fill a large pitcher with ice. Add the fresh lemon juice, peach and strawberry puree, and simple syrup. Mix well to combine. Fill with water (approximately 6-8 cups) and stir well.
05 - Cover and store in the refrigerator until ready to serve. When ready to serve, pour into glasses with ice and add desired garnishes. Enjoy!

# Notes:

01 - If using a high-powered blender like a Vitamix, you may not have much seeds or skin left behind in the strainer.
02 - This lemonade can be stored in the refrigerator for up to 3 days.
03 - For a sparkling version, replace some of the cold water with sparkling water just before serving.
