Easy tropical sheet cake (Print Version)

# Ingredients:

→ Cake

01 - Cooking spray
02 - 2 cups all-purpose flour
03 - 1 ½ cups white sugar
04 - 1 teaspoon baking soda
05 - ½ teaspoon kosher salt
06 - 2 large eggs
07 - 1 (20-ounce) can crushed pineapple with juice
08 - 1 teaspoon vanilla extract

→ Frosting

09 - 1 (8 ounce) package cream cheese, softened
10 - ½ cup unsalted butter, softened
11 - 1 ½ cups confectioners' sugar
12 - 1 teaspoon vanilla extract

# Instructions:

01 - Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-baking dish with cooking spray.
02 - Mix flour, white sugar, baking soda, and salt in a large bowl and make a well in the center.
03 - Add eggs, crushed pineapple with juice, and vanilla; whisk until well-combined.
04 - Pour into the prepared baking dish. Bake in the preheated oven until top is deeply browned and a toothpick inserted into the center of the cake comes out clean, about 35 minutes.
05 - Let cake cool in the dish on a wire rack, 1 to 2 hours.
06 - To make the frosting: Combine cream cheese and butter for frosting in a mixing bowl; beat with an electric mixer until smooth, about 1 minute.
07 - Add confectioners' sugar and vanilla; beat until creamy, about 1 or 2 minutes more.
08 - Spread frosting on cooled cake. Serve and enjoy!

# Notes:

01 - This cake is especially moist thanks to the crushed pineapple and its juice in the batter.
02 - Make sure the cake is completely cool before frosting to prevent the cream cheese frosting from melting.
