Pineapple Cowboy Candy (Print Version)

# Ingredients:

01 - 3 cups fresh pineapple, diced.
02 - 1 cup jalapeño peppers, sliced thin.
03 - 1 cup apple cider vinegar.
04 - 2 cups granulated sugar.
05 - 2 tablespoons lemon juice.
06 - 1 teaspoon mustard seeds.
07 - ½ teaspoon turmeric powder.
08 - 1 tablespoon ginger, grated.
09 - 2 garlic cloves, chopped.

# Instructions:

01 - Combine vinegar, sugar, lemon juice, mustard seeds, turmeric, ginger, and garlic. Boil then reduce to simmer until sugar dissolves.
02 - Add pineapple and jalapeños. Simmer 20 minutes until pineapple is tender and liquid thickens.
03 - Sterilize jars and lids in boiling water for 5 minutes.
04 - Fill jars leaving ¼ inch headspace. Wipe rims, add lids. Process in boiling water 10 minutes.
05 - Remove jars, cool completely. Check seals before storing.

# Notes:

01 - Great with cream cheese and crackers.
02 - Can use as meat glaze.
03 - Remove jalapeño seeds for milder version.
