No-Bake Healthy Snack Balls (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 ½ cups rolled oats
02 - 1 ½ cups desiccated coconut
03 - 1 ⅓ cups raspberries (fresh or frozen)
04 - 18 medjool dates, pitted (about 330 grams after pits removed)
05 - 1 teaspoon vanilla paste or extract
06 - 2 tablespoons chia seeds
07 - Pinch of salt
08 - 3 tablespoons acai powder (optional)

→ Optional Coatings

09 - Extra desiccated coconut
10 - Cacao powder
11 - Melted dark chocolate (for drizzling)

# Instructions:

01 - Place all of the ingredients into a food processor and blend until the mixture breaks down and starts to stick together (this may take a couple of minutes). You may need to scrape down the sides of the food processor once or twice.
02 - Roll the mixture into firm balls of your desired size. If desired, roll the balls in cacao powder or extra coconut, or drizzle with some melted dark chocolate.
03 - Refrigerate until ready to serve!

# Notes:

01 - You will need a food processor to break down and combine the ingredients. Alternatively, a Thermomix or high-powered blender could be used.
02 - Medjool dates are recommended over regular dates, as they add sweetness and their sticky nature helps to bind the balls. If using regular, dried dates, soak them in water first to soften them.
03 - The mixture should hold together firmly when squeezed, but too much of the dry ingredients will make it crumbly. Too many wet ingredients will make it too sticky.
04 - These can be frozen in an airtight container for up to 3 months. Separate layers with baking paper and thaw before eating.
05 - Bliss balls will keep in the fridge for up to a week in an airtight container.
