Pancake Sausage Breakfast Bake (Print Version)

# Ingredients:

01 - Cooking spray or some soft butter, for prepping your dish
02 - 115 g shredded cheddar, totally up to you
03 - 0.5 teaspoon cinnamon, just if you’re feeling it
04 - 2 tablespoons maple syrup, optional sweet hit
05 - 2 tablespoons melted butter
06 - 1 teaspoon vanilla extract
07 - 1 large egg
08 - 240 ml whole milk
09 - 240 g pancake mix
10 - 450 g breakfast sausage, spicy or mild

# Instructions:

01 - Give the hot dish about 5 minutes to cool off. Then cut it up and dish it out warm. Drizzle more maple syrup on top if you want.
02 - Toss it into the oven you already heated up. Let it bake right in the center rack for about 25 to 30 minutes. The top should get a deep, golden tan and when you stick in a toothpick, it comes out clean.
03 - Spoon half the pancake batter into your greased baking pan. Scatter all the sausage over this, then sprinkle cheddar cheese if you're in the mood. Top it all with the rest of the batter so nothing’s showing through.
04 - Combine the pancake mix, milk, egg, vanilla, melted butter, maple syrup, and cinnamon in a big bowl. Just whisk enough to blend—don’t keep mixing or it’ll get tough. Lumps are definitely okay.
05 - Put your sausage in a frying pan over medium heat. Smash it up into little pieces as it cooks. Once it’s browned, drain off all the grease.
06 - Cover every bit of your 23x33cm baking dish with cooking spray or soft butter. Make sure no spots are missed.
07 - Crank your oven up to 190°C. Wait until it’s good and ready before you start anything else.

01 - Don’t beat the pancake mix to death—keep it just barely mixed so it comes out fluffy and soft.
