Sausage Butternut Squash and Brussels Sprouts (Print Version)

# Ingredients:

01 - 3 cups butternut squash, peeled and cubed.
02 - 12 ounces Brussels sprouts.
03 - 12 ounces cooked sausage.
04 - 4 tablespoons olive oil, divided.
05 - Salt and pepper to taste.
06 - Smoked paprika to taste.
07 - Fresh thyme.

# Instructions:

01 - Preheat oven to 400°F, line baking sheet with parchment.
02 - Toss cubed squash with oil, salt and pepper, spread on baking sheet.
03 - Trim and halve sprouts, toss with oil, salt and pepper.
04 - Roast vegetables 20-30 minutes until tender.
05 - Slice and cook sausage in skillet 5 minutes per side.
06 - Mix roasted vegetables with sausage, add seasonings.

# Notes:

01 - Can roast vegetables together.
02 - Good for meal prep.
03 - Use any pre-cooked sausage.
