Sausage Gravy Breakfast Pizza (Print Version)

# Ingredients:

→ For the Pizza

01 - 1 pre-made pizza dough
02 - 1 tablespoon olive oil
03 - 1½ cups mozzarella cheese, shredded
04 - 1 cup shredded cheddar cheese
05 - 3–4 eggs
06 - Fresh chives or green onions, for garnish

→ For the Sausage Gravy

07 - ½ lb (225g) breakfast sausage (pork or turkey)
08 - 2 tablespoons butter
09 - 2 tablespoons all-purpose flour
10 - 1¼ cups whole milk
11 - Salt and pepper, to taste
12 - Optional: pinch of cayenne or crushed red pepper for heat

# Instructions:

01 - In a skillet over medium heat, cook the sausage until browned and crumbled. Add butter and stir until melted. Sprinkle in flour, stir to combine, and cook for 1 minute. Slowly whisk in the milk, stirring until thickened. Season with salt, pepper, and optional spice. Set aside.
02 - Preheat oven to 450°F (230°C). Roll out the dough on a baking sheet or pizza stone. Brush with olive oil. Spread sausage gravy evenly across the dough. Sprinkle with mozzarella and cheddar cheese. Create 3–4 small nests in the cheese and crack an egg into each one.
03 - Bake for 12–15 minutes, until the crust is golden, cheese is bubbly, and eggs are cooked to your liking. Broil for 1 minute at the end if you want more golden cheese on top.
04 - Sprinkle with chopped chives or green onions. Slice and serve immediately.

# Notes:

01 - For extra crunch, use a cast-iron skillet for a deep-dish version.
02 - Add bacon bits or sautéed bell peppers for variety.
03 - Replace eggs with scrambled for a variation.
