A rich and filling soup combining spicy Italian sausage with cheese tortellini and vegetables in a creamy tomato broth. Perfect for cold weather meals.
# Ingredients:
01 - 1 pound hot Italian sausage, ground.
02 - 3 carrots, peeled and diced.
03 - 1 large white onion, diced.
04 - 1 tablespoon garlic, minced.
05 - 4 cups chicken stock.
06 - 2 cans (29 ounces) diced tomatoes.
07 - 16 ounces cheese tortellini.
08 - 1 cup heavy cream.
09 - Parmesan cheese for serving.
# Instructions:
01 - Brown sausage in large pot until crispy. Remove to paper towel-lined bowl.
02 - Reduce heat to medium. Cook carrots and onion with splash of stock. Add garlic when vegetables soften.
03 - Add remaining stock and tomatoes. Bring to boil.
04 - Stir in tortellini and cooked sausage. Cook 5 minutes until pasta is tender.
05 - Remove from heat. Stir in cream. Serve with Parmesan.
