Set oven temperature to 375°F (190°C) and allow to fully preheat.

In a large pan over medium heat, cook ground beef and pork for 7-10 minutes until browned and no longer pink. Season with Italian seasoning, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Add marinara sauce and mix thoroughly. Remove from heat and set aside.

In a medium bowl, combine ricotta cheese, cottage cheese (if using), eggs, 1/2 cup Parmesan cheese, remaining 1/2 teaspoon salt, remaining 1/2 teaspoon black pepper, basil, parsley, garlic powder, and onion powder. Stir until the mixture is homogenous.

Lightly grease a 16x9-inch rimmed sheet pan or line with foil. Spread half of the meat sauce evenly across the pan. Arrange half of the lasagna noodles in a single layer. Evenly distribute the ricotta filling over the noodles. Place the remaining noodles in a single layer, then top with the remaining meat sauce.

Cover the sheet pan tightly with foil. Bake in the preheated oven for 30 minutes.

While baking, slice fresh mozzarella cheese. After 30 minutes, remove foil. Arrange mozzarella slices on top, sprinkle with shredded mozzarella and remaining Parmesan cheese.

Return to oven and bake uncovered for 10-15 minutes until cheeses are thoroughly melted and bubbling.

Allow the lasagna to cool for 10 minutes before portioning. Garnish with additional basil, parsley, and Parmesan cheese as desired. Slice and serve.
