Ranch seasoned one-pan dinner (Print Version)

# Ingredients:

01 - 3 tablespoons olive oil
02 - 2 pounds baby potatoes
03 - 6 pork chops (either boneless or bone-in will work, about 1-inch thick)
04 - 1 ounce ranch dressing mix (1 oz package)
05 - 1 teaspoon smoked paprika
06 - 1 tablespoon dried oregano
07 - 1 teaspoon ground black pepper
08 - 1 tablespoon fresh parsley, chopped, for garnish

# Instructions:

01 - Preheat your oven to 400°F. Spray a baking sheet with cooking spray.
02 - Place potatoes and pork chops on the baking sheet and drizzle the olive oil over both. Toss well to coat everything evenly.
03 - In a small bowl, mix together the ranch seasoning, smoked paprika, oregano and black pepper. Rub this seasoning mixture over both the pork chops and potatoes. Add salt to taste if needed.
04 - Place the baking sheet in the oven and roast for about 30 minutes or until the pork chops reach an internal temperature of 145°F (63°C) and the potatoes are fork tender.
05 - Garnish with freshly chopped parsley and serve immediately while hot.

# Notes:

01 - You can use regular potatoes cut into cubes instead of baby potatoes. Yukon gold or red skin potatoes work well.
02 - The sheet pan used in this recipe is 17.25 x 12.25 x 1 inches.
03 - Cooking times may vary depending on your oven and the thickness of your pork chops.
