Cheesy layered potato beef casserole (Print Version)

# Ingredients:

01 - 1 lb ground beef
02 - 3 lbs russet potatoes, washed, peeled, and sliced into 1/4" coins
03 - 1 cup thinly sliced white onion
04 - 1 tsp smoked paprika
05 - 1/2 tsp garlic powder
06 - 1 tsp parsley
07 - salt & pepper to taste
08 - 3 cups shredded sharp cheddar cheese
09 - 2/3 cup chicken broth

# Instructions:

01 - In a skillet over medium high heat, brown the ground beef- stirring and breaking up as it cooks. Drain, return to the skillet, and set aside.
02 - Add the smoked paprika, garlic powder, parsley, salt and pepper to a small prep bowl, stir them together until evenly combined.
03 - To the bottom of your slow cooker, add half of the potatoes in an even layer. Spread half of the sliced onions evenly out over the potatoes. Sprinkle half of the seasonings evenly out over top. Add half of the meat in an even layer, followed by half of the cheese.
04 - Repeat the layers with the remaining ingredients: potatoes, onions, seasonings, meat, and cheese.
05 - Slowly pour the chicken broth evenly out over the layers.
06 - Cover and cook the casserole on high for 4 hours without removing the lid. Resist the temptation, and trust that if you open it, the heat lost in the process will prevent the potatoes from getting soft.
07 - Turn the slow cooker off, and let the casserole 'rest' for 3-5 minutes before serving. Garnish with fresh chopped parsley if desired.

# Notes:

01 - Don't lift the lid while cooking or the potatoes won't get tender.
02 - Make sure to let this rest before serving so it can set.
