Slow Cooker Peanut Chicken (Print Version)

# Ingredients:

01 - 1.5 to 2 pounds boneless, skinless chicken thighs or breasts

→ Sauce

02 - 1 cup unsweetened creamy peanut butter
03 - 1/2 cup low-sodium soy sauce
04 - 1/4 cup honey or brown sugar
05 - 2 to 3 tablespoons rice vinegar or lime juice
06 - 1 tablespoon sesame oil
07 - 1 tablespoon freshly grated ginger
08 - 3 garlic cloves, minced
09 - 1 to 2 teaspoons red chili flakes or Sriracha
10 - 1 cup canned coconut milk
11 - 1/2 cup water or chicken broth

# Instructions:

01 - In a mixing bowl, whisk together peanut butter, soy sauce, honey or brown sugar, rice vinegar or lime juice, sesame oil, grated ginger, minced garlic, chili flakes or Sriracha, coconut milk, and water or chicken broth until smooth.
02 - Place chicken thighs or breasts in an even layer at the bottom of the slow cooker.
03 - Pour the prepared peanut sauce evenly over the chicken, ensuring all pieces are coated.
04 - Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is tender and fully cooked through.
05 - Remove chicken from the cooker and shred or slice as desired. Return to the sauce and stir to thoroughly coat.
06 - Serve hot over steamed rice or as desired. Garnish with fresh cilantro, lime wedges, or chopped peanuts if preferred.

# Notes:

01 - For a richer sauce, always include coconut milk. Adjust the spice level with more or less chili.
