Italian inspired grilled cheese (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 slices of good sourdough/crusty bread
02 - 1/2 ball of fresh mozzarella, sliced
03 - 1 handful of grated cheddar/mozzarella/gruyere (use what you have - optional)
04 - 2 tablespoons fresh basil pesto
05 - 3 slices of prosciutto
06 - 4-5 basil leaves, to top
07 - Butter, for spreading
08 - Salt and pepper to taste

# Instructions:

01 - Heat a pan over low-medium heat. Take the first slice of bread and spread butter on one side. Flip the slice over (so the butter side is down).
02 - Layer the bread with grated cheese, prosciutto, fresh sliced mozzarella, basil leaves and pesto. Sprinkle with salt and pepper.
03 - Top with the other slice of bread and butter the top side that's facing up.
04 - Place in the pan and fry for about 5 minutes on each side, until the outside is super crunchy and golden and the cheese inside is melted.
05 - Remove from pan, slice in half if desired, and serve immediately while hot and cheese is melty.

# Notes:

01 - Using both fresh and grated mozzarella gives you a good melty middle with excellent flavor.
02 - The quality of the bread and pesto makes a big difference in this simple sandwich.
03 - Cook on low-medium heat to ensure the cheese melts while the bread gets golden without burning.
