One Pan Sticky Chicken Rice (Print Version)

# Ingredients:

→ Chicken and Marinade

01 - 6 chicken thighs (bone-in, skin-on or boneless)
02 - 3 tablespoons soy sauce
03 - 2 tablespoons honey
04 - 2 garlic cloves, minced
05 - 1 tablespoon fresh ginger, grated
06 - 2 tablespoons vegetable oil
07 - 1 teaspoon chili flakes (optional)

→ Rice and Vegetables

08 - 2 cups jasmine rice, rinsed
09 - 3 cups chicken broth
10 - 1 onion, diced
11 - 1 red bell pepper, sliced
12 - 1 cup frozen peas
13 - 1 tablespoon sesame oil
14 - Fresh cilantro or green onions for garnish

# Instructions:

01 - Mix soy sauce, honey, garlic, ginger, oil, and chili flakes. Coat chicken and marinate 30 minutes or overnight.
02 - Rinse rice thoroughly and spread in large baking tray. Pour chicken broth over evenly.
03 - Place chicken on rice skin-side up. Add vegetables around chicken. Drizzle with sesame oil.
04 - Cover and bake at 375°F for 20 minutes. Uncover and bake 20-25 minutes more until chicken is done.
05 - Optional: broil 3-5 minutes for crispy skin. Rest 5 minutes, garnish with herbs and serve.

01 - Rinse rice thoroughly for best texture
02 - Place chicken skin-side up for crispy skin
03 - Add extra broth if rice seems dry
