Soft Strawberry Sugar Cookies (Print Version)

# Ingredients:

→ Cookie Base

01 - 1 cup (2 sticks) unsalted butter, softened
02 - 2 large eggs, room temperature
03 - 3 cups (375g) all-purpose flour
04 - 2 tablespoons cornstarch
05 - 2 teaspoons baking powder
06 - 1 teaspoon baking soda
07 - 2 teaspoons cream of tartar
08 - ½ teaspoon salt
09 - 1 ½ cups (300g) granulated sugar

→ Strawberry Flavoring

10 - 6 tablespoons (36g) freeze-dried strawberry powder
11 - 1 teaspoon pure vanilla extract
12 - 1 teaspoon pure strawberry extract
13 - ½ teaspoon red gel food coloring

→ Sparkling Sugar Coating

14 - ½ cup white or red sparkling sugar
15 - 1 tablespoon freeze-dried strawberry powder

# Instructions:

01 - Blend freeze-dried strawberries in a high-speed blender until they become a fine powder.
02 - Mix 1 tablespoon strawberry powder with ½ cup sparkling sugar. Store in airtight container.
03 - Cream butter and sugar for 3 minutes. Add eggs one at a time, then mix in vanilla, strawberry extract, and food coloring.
04 - Whisk flour, cornstarch, baking powder, baking soda, cream of tartar, salt, and strawberry powder. Gradually add to wet ingredients.
05 - Chill dough for 2 hours. Form into balls, roll in sparkling sugar, and bake at 350°F for 10 minutes.
