Taco Bell Nacho Fries (Print Version)

# Ingredients:

→ Fries

01 - Vegetable oil, for frying
02 - 450 g bag of frozen super crispy French fries

→ Seasoning Mixture

03 - 2 tablespoons paprika
04 - 2 teaspoons chili powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon garlic powder
07 - 2 teaspoons salt, fine
08 - 0.25 teaspoon optional cayenne pepper

→ Cheese Sauce

09 - 60 ml whole milk
10 - 1 tablespoon brine from pickled jalapeños
11 - 16 slices American processed cheese

# Instructions:

01 - Stir together chili powder, cayenne if you want, paprika, salt, onion powder, and garlic powder in a small mixing bowl until everything's spread out evenly.
02 - Fill a deep saucepan with enough oil so the fries will be covered by about 7.5 cm. Get it up to 180°C, checking with a thermometer.
03 - Drop the frozen fries right in the hot oil. Fry for about 6-8 minutes until they're golden and crunchy. Grab them out with a slotted spoon and let them drain on paper towels.
04 - Rip up the cheese slices. Toss them in a microwave bowl, add the milk and jalapeño brine. Pop in the microwave uncovered, heating for 30 seconds at a time and stirring after each go, until everything's melted and super smooth.
05 - Drop hot fries in a big bowl and shake them around with your seasoning mix so they get coated everywhere.
06 - Move your seasoned fries onto a tray and set out the cheese sauce nice and warm for dipping.

# Notes:

01 - Keep an eye on the oil—if it gets too cool the fries turn soggy. Best to munch right after frying for that perfect crunch.
