Stir together chili powder, cayenne if you want, paprika, salt, onion powder, and garlic powder in a small mixing bowl until everything's spread out evenly.

Fill a deep saucepan with enough oil so the fries will be covered by about 7.5 cm. Get it up to 180°C, checking with a thermometer.

Drop the frozen fries right in the hot oil. Fry for about 6-8 minutes until they're golden and crunchy. Grab them out with a slotted spoon and let them drain on paper towels.

Rip up the cheese slices. Toss them in a microwave bowl, add the milk and jalapeño brine. Pop in the microwave uncovered, heating for 30 seconds at a time and stirring after each go, until everything's melted and super smooth.

Drop hot fries in a big bowl and shake them around with your seasoning mix so they get coated everywhere.

Move your seasoned fries onto a tray and set out the cheese sauce nice and warm for dipping.
