Hearty sausage gravy potato bowl (Print Version)

# Ingredients:

→ For the Tater Tot Bowl

01 - 1 bag (32 oz) frozen tater tots
02 - 1 tablespoon olive oil (optional, for extra crispness)
03 - 1 ½ cups shredded cheddar cheese (or your favorite cheese)
04 - 4 large eggs
05 - Salt and pepper to taste

→ For the Sausage Gravy

06 - 1 pound Halal sausage (beef, chicken, turkey, or plant-based sausage)
07 - 2 tablespoons unsalted butter
08 - 2 tablespoons all-purpose flour
09 - 2 cups whole milk (or dairy-free milk alternative)
10 - ½ teaspoon garlic powder
11 - ½ teaspoon onion powder
12 - Salt and pepper to taste
13 - A pinch of cayenne pepper (optional, for heat)

→ Optional Garnishes

14 - Chopped fresh parsley or green onions
15 - Hot sauce
16 - Extra shredded cheese for topping

# Instructions:

01 - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat. Spread the frozen tater tots evenly and drizzle with olive oil if using. Bake according to package instructions, typically 20-25 minutes, until golden and crispy.
02 - In a large skillet over medium heat, cook the sausage. Break it into small crumbles as it cooks until browned and fully cooked through, about 7-10 minutes.
03 - Add butter to the cooked sausage and allow it to melt. Stir in the flour and cook for 1-2 minutes to create a roux. Gradually pour in the milk, whisking continuously to prevent lumps. Keep stirring until the gravy thickens, about 3-4 minutes.
04 - Add garlic powder, onion powder, salt, pepper, and cayenne pepper (if using) to the gravy. Taste and adjust seasonings as needed. If too thick, add a little extra milk to reach desired consistency.
05 - While the gravy simmers, heat a non-stick skillet over medium heat with a small amount of butter or oil. Crack the eggs into the skillet and cook, stirring gently, until scrambled and cooked through. Season with salt and pepper.
06 - Divide the crispy tater tots among individual bowls. Top with scrambled eggs, then pour the sausage gravy generously over everything. Sprinkle shredded cheese on top, allowing it to melt from the heat.
07 - If desired, garnish with chopped parsley or green onions and serve with hot sauce on the side. Enjoy while hot.

# Notes:

01 - You can make the sausage gravy ahead of time and reheat it when ready to serve.
02 - For a dairy-free version, use plant-based milk and butter alternatives in the gravy.
03 - This recipe is versatile - feel free to add sautéed vegetables or use different types of cheese.
