Creamy Tuscan Salmon (Print Version)

# Ingredients:

01 - 1 tablespoon butter.
02 - 1 tablespoon olive oil.
03 - 4 salmon fillets.
04 - Salt and pepper to taste.
05 - 2 cloves garlic, minced.
06 - 3-4 sun-dried tomatoes, sliced.
07 - 1/2 cup dry white wine.
08 - 1 cup heavy cream.
09 - 1/2 cup Parmesan cheese.
10 - 1 cup fresh spinach.

# Instructions:

01 - Pat salmon dry and season with salt and pepper. Heat butter and oil in skillet over medium-high heat.
02 - Cook salmon skin-side up for 6 minutes until golden, then flip and cook 2 minutes more. Remove from pan.
03 - Lower heat and cook garlic and sun-dried tomatoes for 30 seconds until fragrant.
04 - Pour in wine and simmer until reduced by half, about 5 minutes.
05 - Add cream and Parmesan. Simmer 2-3 minutes until slightly thickened.
06 - Add spinach and return salmon to pan. Simmer 5 minutes until salmon is cooked through.

# Notes:

01 - Serve with mashed potatoes or crusty bread.
02 - Can thin sauce with broth if needed.
03 - Pat salmon dry for better searing.
