Strawberry Cheesecake Egg Rolls (Print Version)

# Ingredients:

→ Filling

01 - 8 ounces cream cheese, room temperature
02 - 100 grams granulated sugar
03 - 1 teaspoon lemon juice
04 - 1 pound fresh strawberries, washed, hulled, diced

→ Wraps

05 - 12 egg roll wrappers
06 - Water, for sealing edges

→ Topping

07 - Confectioners' sugar, for dusting

# Instructions:

01 - In a medium mixing bowl, combine cream cheese, sugar, and lemon juice. Using a hand mixer on medium speed, mix until smooth and creamy. Fold in the diced strawberries.
02 - Place an egg roll wrapper on a clean work surface. Add 2-3 tablespoons of the cream cheese mixture to the center of the wrapper. Wet the edges of the wrapper with water.
03 - Fold the bottom corner of the wrapper over the filling. Roll once to encase the filling. Fold in the right and left corners toward the center and continue rolling. Add more water to seal edges, as needed.
04 - Brush or spray the outside of the egg rolls with cooking oil.
05 - Place egg rolls in an air fryer preheated to 400°F. Cook for 4-5 minutes, flipping halfway through, until golden brown. Repeat in batches if necessary.
06 - Allow egg rolls to cool on a plate. Dust with confectioners' sugar before serving.
