Sweet and crunchy side dish (Print Version)

# Ingredients:

01 - 1 red delicious apple
02 - 1 granny smith apple
03 - 2 tablespoons lemon juice
04 - 2 cups matchstick carrots (you can usually buy precut bags at the grocery store)
05 - 1/4 cup yellow onion, finely diced
06 - 1/3 cup dried sweetened cranberries
07 - 1/2 cup vanilla yogurt
08 - 1/4 cup mayo
09 - 1 tablespoon sugar
10 - 1/4 teaspoon salt
11 - 1/4 teaspoon pepper
12 - 1 cup canned mandarin segments, drained

# Instructions:

01 - Cut both apples matchstick style and place the pieces in a bowl.
02 - Pour the lemon juice over the apple pieces in the bowl and toss well to coat all of the apples.
03 - Set the bowl aside to let the apples soak up the lemon juice for 5 minutes, this will prevent browning.
04 - Pour the matchstick carrots into a large mixing bowl. Add the diced onion and sweetened dried cranberries to the bowl.
05 - Once the apples have sat for at least 5 minutes, add them to the mixing bowl.
06 - Add the vanilla yogurt and mayo to the bowl. Add the sugar, salt and pepper to the bowl.
07 - Stir all of the ingredients together well.
08 - Add the mandarins to the bowl and stir them into the salad.
09 - Cover the bowl and refrigerate for at least three hours.
10 - Serve and enjoy!

# Notes:

01 - Carrot Apple Salad is a delicious and colourful salad loaded with sliced red and green apples, carrots, dried cranberries and mandarins all tossed in a vanilla yogurt and mayo dressing.
02 - This salad needs to chill for at least 3 hours before serving for the best flavor.
