Mix water, sugar and yeast in stand mixer bowl. If using active dry yeast, let foam 3-5 minutes.

Add salt, oil, and 3 cups flour. Gradually add remaining flour until dough clears bowl sides. Knead 2-3 minutes until smooth.

Either let rest 10 minutes and stir down 6 times, or let rise once until doubled (about 1 hour).

Divide dough in half. Shape each into 9x13 rectangle, roll up, seal edges. Place on parchment-lined sheets. Cut diagonal slashes on top.

Cover and let rise until doubled, about 1 hour.

Bake at 375°F for 25-30 minutes until golden. Optional: add ice cubes to oven for crispy crust.
