Cut the challah bread into even slices approximately 2.5 cm (1 inch) thick.

In a medium bowl or shallow dish, whisk together the milk, eggs, ground cinnamon, vanilla extract, and granulated sugar until well combined.

Dip each bread slice into the custard mixture, turning to coat both sides. Allow each piece to soak briefly so the mixture absorbs into the bread.

Preheat a waffle iron. Place the soaked bread slices onto the hot waffle iron, close it, and cook until golden brown. Remove and repeat with the remaining slices.

Transfer cooked waffles to a wire rack if desired to prevent them from getting soggy. Serve warm with unsalted butter and maple syrup.
