In a saucepan over medium-low heat, warm the peanut butter, honey, vanilla, and salt for 2-4 minutes. Stir occasionally until everything is melted together and smooth.

Pour the warm peanut butter mixture over the cornflakes in a large mixing bowl. Stir everything together, gently crushing the cereal as you mix until all the flakes are coated with the peanut butter mixture.

Using your hands, form the mixture into small logs or bars - you should get about 12-14 pieces. Place each bar on a parchment-lined plate or baking sheet.

Pop the shaped bars into the freezer for about an hour until they're firm enough to handle and dip.

Once the bars are frozen, melt the chocolate chips and coconut oil together in the microwave in 30-second intervals, stirring between each, or in a double boiler on the stove. Stir until completely smooth.

Working quickly so the bars don't warm up too much, dip each one into the melted chocolate, allowing excess to drip off. Place back on the parchment-lined sheet and return to the freezer for about 10 minutes until the chocolate sets.
