Crunchy Peanut Butter Candy Bars (Print Version)

# Ingredients:

→ Base Mixture

01 - 1 cup peanut butter
02 - 1/3 cup honey
03 - 1/2 tsp vanilla extract
04 - 1/2 tsp sea salt
05 - 1 + 3/4 cup cornflake cereal

→ Chocolate Coating

06 - 1 cup chocolate chips (dairy free, if needed)
07 - 1 tsp coconut oil

# Instructions:

01 - In a saucepan over medium-low heat, warm the peanut butter, honey, vanilla, and salt for 2-4 minutes. Stir occasionally until everything is melted together and smooth.
02 - Pour the warm peanut butter mixture over the cornflakes in a large mixing bowl. Stir everything together, gently crushing the cereal as you mix until all the flakes are coated with the peanut butter mixture.
03 - Using your hands, form the mixture into small logs or bars - you should get about 12-14 pieces. Place each bar on a parchment-lined plate or baking sheet.
04 - Pop the shaped bars into the freezer for about an hour until they're firm enough to handle and dip.
05 - Once the bars are frozen, melt the chocolate chips and coconut oil together in the microwave in 30-second intervals, stirring between each, or in a double boiler on the stove. Stir until completely smooth.
06 - Working quickly so the bars don't warm up too much, dip each one into the melted chocolate, allowing excess to drip off. Place back on the parchment-lined sheet and return to the freezer for about 10 minutes until the chocolate sets.

# Notes:

01 - These taste even better after sitting in the fridge overnight.
02 - Store in an airtight container in the refrigerator or freezer.
03 - For a fun variation, try adding a sprinkle of flaky sea salt on top of the wet chocolate.
