Shrimp and Creamed Corn (Print Version)

# Ingredients:

01 - 1½ pounds large shrimp, peeled and deveined.
02 - 1½ cups corn kernels (from 2 ears).
03 - 4 ounces block feta cheese.
04 - 1 cup half-and-half.
05 - ½ cup chopped onion.
06 - 5 cloves garlic, minced.
07 - 2 tablespoons butter.
08 - 2 tablespoons olive oil.
09 - 1 teaspoon chili powder.
10 - 1 teaspoon smoked paprika.
11 - 2 small limes.
12 - Fresh cilantro.
13 - Salt to taste.

# Instructions:

01 - Sprinkle shrimp with chili powder and salt.
02 - Heat olive oil in large skillet. Cook shrimp 3-4 minutes until pink. Remove from pan.
03 - Melt butter in same pan. Cook onions 3 minutes, add garlic for 2 more minutes.
04 - Add corn, paprika, and half-and-half. Simmer, then stir in 3 ounces crumbled feta until melted.
05 - Add lime juice and shrimp back to pan. Top with remaining corn, lime slices, cilantro, and feta.

# Notes:

01 - Best made with fresh corn when in season.
02 - Block feta works better than pre-crumbled.
