In a medium mixing bowl, whisk together Greek yogurt, rolled oats, milk, chia seeds or ground flax meal, vanilla extract, salt, honey or maple syrup, cream cheese, lemon zest and juice until thoroughly mixed. Gently fold in chopped strawberries.

Spoon the mixture into a jar or container with a tight-fitting lid.

Seal and refrigerate for at least 4 hours, preferably overnight, to allow the oats to absorb the liquid and flavors to develop.
