Easy Strawberry Cookie Sandwiches (Print Version)

# Ingredients:

→ Cookie Shells

01 - 1 box (15.25 oz) strawberry cake mix
02 - ½ cup butter, softened
03 - 1 egg
04 - 1 teaspoon vanilla extract

→ Filling

05 - 3 tablespoons pureed strawberries
06 - 8 oz cream cheese, softened
07 - 3-4 cups powdered sugar

# Instructions:

01 - Beat butter until smooth, add egg and vanilla. Mix in cake mix until well combined.
02 - Refrigerate dough for at least one hour.
03 - Form 2-inch dough balls, place on lined baking sheet. Bake at 350°F for 10 minutes.
04 - Cool briefly on pan, then transfer to wire rack to cool completely.
05 - Beat strawberry puree and cream cheese until smooth. Gradually add powdered sugar to desired consistency.
06 - Spread or pipe filling on half the cookies, top with remaining cookies to make sandwiches.

01 - Store in refrigerator 3-5 days
02 - Can halve frosting recipe for thinner layer
03 - Dough must be chilled
