These elegant Swedish cookies offer a perfect balance of textures - crisp edges with delightfully chewy centers that create an irresistible bite. Known for their distinctive diagonal cut and caramel-like flavor, Kolasnittar represent Swedish baking at its finest - simple ingredients transformed through careful technique into something truly special. Best of all, they come together in just 30 minutes, making them accessible even on busy days when you crave something homemade and delicious.

Last Christmas, I made these for my holiday cookie exchange, and they disappeared faster than any other treat on the table. My neighbor, who had spent time in Sweden, recognized them immediately and said they transported her right back to the charming cafés of Stockholm. Even friends who had never encountered Swedish baking before were immediately won over by the unique texture and caramel-honey notes.

Ingredients

  • Butter: Creates richness and contributes to the crisp-chewy texture
  • Sugar: Provides sweetness and helps create the characteristic chewiness
  • Honey: Adds distinctive flavor and moisture; can be substituted with golden syrup for a more traditional version
  • Flour: Forms the structure of the cookie while allowing for spread during baking
  • Vanilla: Enhances the sweet caramel notes with its aromatic quality
  • Baking soda: Helps create the perfect rise and texture

Step-by-Step Instructions

Step 1:
Prepare your workspace - Begin by preheating your oven to 180°C (350°F) and lining a baking sheet with parchment paper. Having your workspace organized before mixing the dough ensures a smooth process, as these cookies need to be shaped and baked promptly once the dough is mixed.
Step 2:
Cream butter and sugar - In a mixing bowl, combine softened butter and sugar, beating until light and fluffy. This process incorporates air into the mixture, which contributes to the cookie's texture. Take your time with this step - proper creaming usually takes 2-3 minutes and results in a notably lighter color and increased volume.
Step 3:
Add remaining ingredients - To the butter mixture, add honey (or golden syrup if using), flour, vanilla, and baking soda. Mix until just combined into a soft, pliable dough. Avoid overmixing, which can develop gluten and make the cookies tough rather than tender. The dough should be cohesive but not stiff.
Step 4:
Shape the dough - Divide the dough into three equal portions. On your lined baking sheet, shape each portion into a log approximately 30cm (12 inches) long and 2.5cm (1 inch) wide. Space the logs well apart as they will spread significantly during baking. Using your fingers, gently flatten the top of each log to create an even surface that will bake uniformly.
Step 5:
Bake to golden perfection - Place the baking sheet in the preheated oven and bake for 12-14 minutes, until the logs have spread and turned a beautiful golden brown color. The edges should appear set while the center may still look slightly soft - this is perfect, as it ensures the characteristic chewy texture.
Step 6:
Cut while warm - This step is crucial and must be done while the cookies are still warm and slightly soft. Remove the baking sheet from the oven and immediately use a sharp knife to cut each log diagonally into pieces about 2cm (¾ inch) wide. Make clean, decisive cuts to achieve the classic shape without crumbling. If the logs cool too much before cutting, they may crumble or crack.
Step 7:
Cool completely - Allow the cut cookies to cool completely on the baking sheet. As they cool, they'll firm up and develop their characteristic texture - crisp around the edges with a wonderfully chewy center. Resist the temptation to move them while warm, as they're quite fragile until fully cooled.

The Golden Syrup vs. Honey Debate

Traditionally, Kolasnittar are made with "Ljus Sirap" (Swedish light syrup) or golden syrup, which gives them a distinct caramel flavor. However, honey creates an equally delicious variation with its own unique character. The honey version tends to have more complex floral notes, while the syrup version has a purer caramel taste. Both are authentic in their own way, with regional variations throughout Sweden favoring one or the other based on local preferences and availability.

Perfect Pairing Suggestions

These cookies are traditionally enjoyed during "fika," the Swedish coffee break tradition. Pair them with a cup of strong black coffee to complement the sweetness, or try them with a spiced tea during winter months. For an indulgent dessert, sandwich two cookies with a small scoop of vanilla ice cream or a dollop of whipped cream.

Storage Tips

The beauty of Kolasnittar is that they maintain their texture wonderfully when stored properly. Keep them in an airtight container at room temperature for up to two weeks. For the best texture contrast, layer them between sheets of parchment paper to prevent sticking. They actually improve slightly after a day or two as the flavors meld and deepen.

The first time I made these, I waited too long after baking to cut them, and many broke into irregular pieces. I learned that having a sharp knife ready and cutting immediately is essential for those beautiful diagonal slices. Even the broken pieces tasted wonderful, though, so nothing went to waste!

These Kolasnittar represent the beautiful simplicity of Swedish baking - few ingredients, straightforward technique, but extraordinary results. They're proof that you don't need complicated recipes or hard-to-find ingredients to create something truly special. Whether you choose the honey or golden syrup version, these cookies bring a taste of Swedish tradition to your kitchen, along with the irresistible aroma of caramel and butter that will draw everyone to your table.

Frequently Asked Questions

→ What's the difference between using honey versus golden syrup?
Honey gives these cookies a more floral, traditional sweet flavor, while golden syrup creates a deeper, more caramel-like toffee flavor. Golden syrup also tends to make the cookies slightly chewier in the center.
→ Why do I need to cut the cookies while they're still warm?
The cookies will harden as they cool, making them difficult to cut without crumbling. Cutting them while warm ensures clean edges and the proper shape. If they cool too much before cutting, you can return them to the oven for 1 minute to soften them.
→ Can I add other flavors to these cookies?
Yes! These cookies work well with additional flavorings. Try adding 1 teaspoon of cinnamon, the zest of one orange or lemon, or replace the vanilla with almond extract. You can also add 1/3 cup of finely chopped nuts to the dough.
→ How should I store these cookies?
Store in an airtight container at room temperature for up to one week. For longer storage, they can be frozen for up to 3 months. The texture might become slightly less chewy after freezing but they'll still be delicious.
→ Why did my cookies spread too much during baking?
If your cookies spread too much, your butter might have been too warm. Next time, make sure the dough isn't too soft before baking. You can also refrigerate the shaped dough for 15-20 minutes before baking to prevent excessive spreading.

Ingredients

01 100 g (3.5 oz) butter, room temperature
02 90 g (3.1 oz) (½ cup) white sugar
03 175 g (6.1 oz) (1.4 cups) all-purpose flour
04 2 tsp vanilla powder or vanilla extract
05 1/2 tsp baking powder
06 3 tbsp honey or 2 tbsp golden syrup (for toffee flavor)

Instructions

Step 01

Preheat the oven to 180°C (356°F).

Step 02

Mix the butter and sugar together.

Step 03

Add all the other ingredients to the butter mixture and blend them well.

Step 04

Divide the dough into 3 parts.

Step 05

Shape each part into a roll and place them on a baking tray lined with non-stick baking paper. The cookies will spread during baking, so leave enough space between the rolls. (I only placed two rolls of the dough on one tray).

Step 06

Then gently flatten the rolls with your finger.

Step 07

Bake the cookies for 12-14 minutes (until golden).

Step 08

Once out of the oven, immediately and carefully cut them diagonally while they are still warm. (It needs to be warm for you to cut it.)

Step 09

Allow the cookies to cool down, and then enjoy your delicious homemade honey cookies.

Notes

  1. These cookies are crispy on the outside and chewy inside.
  2. You can use either honey for a traditional flavor or golden syrup for more of a toffee taste.
  3. Cutting must be done while the cookies are still warm.
